BROCCOLI RICE

Equipment

Ingredients

  • 1 big head broccoli
  • 2 tbsp olive oil
  • 1 onion finely chopped
  • 4-6 cloves garlic minced (optional)
  • Kosher salt
  • 1-2 tsp lemon juice
  • parsley finely chopped (optional)

Instructions

  • Wash the broccoli thoroughly
  • Remove the stems
  • Grate/Shred the broccoli florets or you may use a blender/food processor
  • In a heated skillet or pan, saute the onion and the garlic (optional)
  • Add the grated/shredded broccoli
  • Stir occasionally
  • Season with salt and pepper
  • Once softened, sprinkle with lemon juice
  • Add some finely chopped parsley to garnish (optional)
  • Serve hot with any fish or meat dish of your choice
